Ingredients:
1 lb. of firm tofu (the firmer the better) cut into 1/4-1/2 inch slices
3/4 cup of your favorite prepared barbeque sauce
1/4 cup smooth peanut butter
2 tablespoons soy sauce
3 cloves fresh garlic, minced
1 teaspoon fresh ginger, minced
a few dashes of any hot sauce (optional)
|
Instructions:
Preheat oven to 300 degrees. In a medium bowl, combine peanut butter and soy sauce.
This mixture may become dry and chunky. If so, add a few splashes of water to thin
it out. Continue to mix until smooth. Add barbeque sauce, garlic, ginger, and hot sauce
and mix well. Place tofu slices on a cookie sheet and spread sauce over the top of each
slice. Be generous, but leave enough for the second side. Bake for 25-30 minutes, turn
over, cover other side with sauce and bake another 25-30 minutes.
